Sartori Di Verona Valpolicella Ripasso 2021 750ml

Vineyard selection of the best grape bunches. The grapes are subsequently pressed gently, followed by skin maceration at low temperature for 8-10 days. The fresh wine then goes through the unique “ripasso” process, wherein it is passed through the pomace of Amarone. During this second fermentation, the wine receives from the dried pomace part of the characteristics that are typical of Amarone. After the malolactic fermentation, the refinement of about 12-18months begins, which also includes medium and large barrels. After bottling the wine rests for at least 6 months in the bottle.

It goes perfectly with savory first courses such as risotto with porcini mushrooms, grilled meats, roasts, and medium-aged cheeses.

90 Points - Wine Enthusiast
"This Ripasso offers an inviting nose of ripe cherry, dark plum, and a distinct note of bitter chocolate. On the palate, it is warm and generously flavored, with a velvety texture and a satisfying, medium-bodied finish that speaks to its skillful appassimento technique."

91 Points - James Suckling
"A well-made and approachable Ripasso, bursting with aromas of morello cherry and sweet spice. It is round and fleshy on the palate, with soft, well-integrated tannins and a clean, fruity aftertaste that makes it both easy to enjoy and an excellent companion for food."
