About the Paranubes Anejo Rum
Paranubes Anejo Rum is an artisanal Mexican cane juice rum (aguardiente de caña) produced in the cloud forests of the Sierra Mazateca. Made from fresh-pressed, wild-fermented sugarcane juice distilled in copper column stills, it is aged for 18 months in oak barrels in Oaxaca. It retains the signature funky, grassy essence of fresh sugarcane juice while layering in rich notes of toasted oak, caramel, and gentle baking spice.
Food Pairing: Charcoal-grilled pork chops, mole negro, aged cheeses, dark chocolate, and roasted sweet plantains.
Tasting Notes : Golden amber in appearance, offering a full-bodied, oily, and complex mouthfeel with a bold, warming palate presence.
Nose : Grassy sugarcane juice, olive brine, green vegetation, vanilla, sweet oak, dried fruit, and a subtle touch of barbecue spice.
Palate : Rich and savory with cooked sugarcane, tropical fruit, olive brine, toasted oak, caramel, roasted plantains, and subtle wood spice.
Finish : Long, warm, and lingering with sweet oak, peppercorns, roasted coffee, and a faint mineral, herbal dryness.
Serve : Best enjoyed neat or over a single ice cube in a tasting glass, or used to add robust complexity to craft Tiki and sugarcane cocktails.
