Gérard Bertrand Cabrières 'Clos du Temple' Rosé 2021 is a monumental, ultra-premium, and multi-layered biodynamic rosé that sits at the absolute pinnacle of luxury winemaking in the South of France. Sourced from a unique patchwork of old vines planted on the schist and limestone terraces of a historic amphitheater vineyard in Cabrières, this exceptional cuvée is widely celebrated as a profound gastronomic wine with the texture and longevity of a fine white Burgundy. It pours a very pale, glittering salmon pink with subtle reflections of brass and gold. The bouquet is remarkably complex and highly aromatic, slowly unfurling in the glass to reveal enticing scents of yellow peach, apricot, and pomegranate, beautifully intertwined with floral hints of rose petals, jasmine, and wild garrigue herbs, balanced by an integrated background of toasted almonds, vanilla, and sweet spices from its six months of maturation in new oak. On the palate, it is medium-to full-bodied, dense, and fleshy, delivering a powerful yet beautifully harmonious core of raspberry sorbet, ripe stone fruits, and juicy tangerine pulp. Animated by a vibrant, seamless acidity and an exquisite, creamy texture, it culminates in a remarkably long, structured finish distinguished by an intense undercurrent of salty mineral concentration, a fine-grained peppery grip, and a subtle whisper of blond tobacco.
Food Pairing: Pairs elegantly with premium seafood crudo, pan-seared scallops with truffle butter, tuna tataki, sea bass cooked en papillote, or roasted guinea fowl.

Pale salmon color with a copper tinge. A serious rosé with a discreet mineral whiff to the fresh vanilla, tangerines, peaches, thyme, spices and fresh flowers. Full-bodied for rose with a broad structure to it. I love the texture and the creamy, yet fresh mouthfeel, rendering a taut palate with fresh, medium acidity. Flavorful and long. From biodynamically grown grapes with Demeter certification. Drink now or hold.

A blend of Syrah, Grenache, Cinsault, Viognier and Mourvèdre, the 2021 Languedoc Cabrières Rosé Clos du Temple was matured for six months in French oak barrels. Evoking aromas of oak, smoke, jasmine, rose petal, gooseberry and spices, it’s tense and fleshy, medium-bodied to full-bodied, lively and rather muscular with a long, fresh finish dominated by oaky notes, which are a little prominent for me at the moment.
