About the Cascahuin Anejo Tequila
Cascahuín Añejo Tequila is a brilliant, masterfully crafted aged expression from the legendary Tequila Cascahuín (NOM 1123) in El Arenal, Jalisco. True to the distillery's uncompromising artisanal heritage, this tequila is made from 100% blue Weber agave cooked in traditional stone ovens and double-distilled in copper pot stills. It is then aged patiently for 14 to 16 months in heavily used, mature American white oak barrels. This intentional choice of older wood ensures that the barrel gently softens and rounds the spirit with elegant layers of dried fruit, nuts, and sweet spices without ever masking the vibrant, mineral-rich heart of the cooked highland agave.
Food Pairing: This complex and robustly flavored tequila pairs beautifully with rich, savory dishes like slow-braised beef birria, grilled ribeye steak with a chimichurri sauce, or rich chicken mole. It also acts as an extraordinary companion to a cheese board featuring mature, aged Gouda or Manchego, as well as decadent desserts like dark chocolate molten lava cake, flan, or churros with a rich caramel dipping sauce.
TASTING NOTES - A brilliant, clean amber-gold color with bright coppery reflections. The texture is full-bodied, luxuriously smooth, and offers a velvety, mouth-coating weight across the palate.
NOSE - Deep and highly aromatic, opening with sweet notes of caramelized agave, honey, and vanilla bean, beautifully layered over dry oak, toasted almonds, raisins, and a soft backdrop of herbal clay minerals.
PALATE - Complex, rich, and perfectly balanced. An initial entry of sweet cooked agave, buttery toffee, and dark chocolate is seamlessly met by a warming mid-palate of baking spices like cinnamon and clove, dry oak woodiness, and roasted nuts.
FINISH - Long, elegant, and exceptionally warm. The rich butterscotch and dried fruit sweetness slowly give way to a lingering, satisfying baseline of sweet agave, toasted oak spice, and a delicate touch of black pepper.
SERVE - Best enjoyed strictly neat at room temperature in a traditional Riedel tequila glass or a spirits snifter to fully appreciate its mature structural complexity and delicate barrel characteristics. Avoid ice, as chilling it will mute the intricate agave and spice aromatics.
