About the Zillinger Numen Fume Blanc
Johannes Zillinger Numen Fumé Blanc is an artisanal, biodynamic natural white wine produced by Johannes Zillinger in Austria's Weinviertel region. Sourced from old-vine Sauvignon Blanc planted on limestone and loess soils, it undergoes minimal-intervention cellar handling, including whole-cluster spontaneous fermentation in Georgian qvevris and extended aging on the lees without added sulfur. In the glass, it shows a naturally hazy golden hue. The nose displays complex aromas of wild herbs, lemon zest, white peach, elderflower, and crushed flint. On the palate, it is dry, textural, and energetic, balancing vibrant stone fruit flavors with a savory, chalky minerality and a long, crisp finish.
Food Pairing: Pairs wonderfully with fresh oysters, grilled sea bass with herbs, goat cheese crostini, roasted poultry, and light Asian-inspired seafood dishes.
