About the Zarate El Palomar Albarino
A magnificent and extraordinarily complex white wine that represents one of the pinnacle expressions of artisanal Albariño. Sourced from the 'El Palomar' single vineyard plot, which houses some of the oldest documented ungrafted vines in the Salnés Valley dating back to 1850, this exceptional wine is crafted by master winemaker Eulogio Pomares. Fermented and aged in a single traditional large oak foudre with partial malolactic fermentation, it opens with an expressive, profound bouquet of ripe yellow orchard fruits, lemon curd, and crushed seashells, intertwined with nuanced notes of wet slate and wild herbs. The palate is brilliantly structural, matching a dense, naturally creamy texture with a piercing, crystalline Atlantic acidity and a long, powerfully saline mineral finish.
Food Pairing: Pairs flawlessly with pan-seared scallops, baked turbot with sea salt, rich seafood stews, traditional Galician octopus, or premium aged cheeses.
