About the Douglas Laing & Co Xop Macallan 30 Year Old 1993
XOP Macallan 30 Year Old 1993 is a highly limited Speyside Single Malt Scotch Whisky selected by Fred Laing for Douglas Laing’s Xtra Old Particular “The Chairman’s Choice” collection. Distilled at The Macallan in May 1993 and bottled in March 2024 after 30 years of maturation, this single-cask release came from refill barrel No. DL18671. Bottled at a natural cask strength of 50.1% ABV without added colouring or chill filtration, only 246 bottles were produced.
Food Pairing: Crème brûlée, roasted hazelnuts, apple or pear tart, dark chocolate, coffee-based desserts and mature hard cheese.
Tasting Notes: A rich, mature Speyside malt combining roasted coffee and cereal character with citrus, orchard fruits, creamy caramelized sweetness and warming spice.
Nose: Roasted coffee and fresh citrus open into cereal and nutty malt aromas.
Palate: Apples and pears develop with syrupy sweetness, followed by crème brûlée, roasted coffee and warming spice.
Finish: Long and warming, with lingering sweet spice, roasted notes and mature malt character.
Serve: Enjoy neat at room temperature. A small amount of water may be added gradually to explore the whisky at its natural cask strength.
