Willibald Pink Gin is a unique small-batch craft gin produced on the Willibald Farm Distillery in Ayr, Ontario. Uniquely aged for 6 to 12 months in fresh Niagara red wine casks, it derives its light pink hue, rich mouthfeel, and balanced flavor structure from the oak. Following maturation, it is subtly infused with raw honey harvested directly from the beehives on the Willibald farm.

Food Pairing: Charcuterie boards, aged white cheddar, soft goat cheese, roasted poultry, grilled salmon, and berry-based desserts.

Tasting Notes: Delicate pale pink tint with a smooth, round, and viscous mouthfeel derived from barrel resting and raw honey.

Nose: Subtle red berry aromas and soft oak tannin warmth alongside traditional piney juniper, zesty citrus, floral nuances, and a touch of sweet honey.

Palate: Rich and well-rounded, displaying a balance of piney juniper and citrus peel complemented by soft red wine fruit notes, gentle vanilla, wood spice, and a delicate honeyed sweetness.

Finish: Medium-length, clean, and warm with lingering notes of gentle oak, mild red fruit, and subtle dry juniper spice.

Serve: Serve over ice, top with Mediterranean tonic water garnished with a grapefruit slice and fresh rosemary sprig, or use as a base in a French 75 or Gimlet.
