Willibald Barrel Aged Gin is a small-batch craft gin produced on the Willibald Farm Distillery in Ayr, Ontario. Distilled from a base of locally grown Ontario grains, this gin is aged in fresh casks for several months, allowing the spirit to pick up complex oak influences while softening the botanical profile. The result is a harmoniously balanced hybrid spirit that bridges the gap between gin and whiskey.
