Wild Life Sherry Cask Single Malt

Distilled at Wild Life Distillery in Canmore, Alberta, this limited-release Canadian single malt is crafted from 100% Alberta-grown barley. Matured in ex-bourbon casks before being finished in select European oak Oloroso sherry butts, this expression combines rich mountain distillery character with deep dried fruit, dark chocolate, and toasted oak spice.

Food Pairing: Charcuterie with cured meats, dark chocolate, sticky toffee pudding, aged Gouda, or roasted duck breast.

Tasting Notes: Deep amber with ruby highlights and rich, medium-to-heavy viscosity along the glass.

Nose: Rich and inviting, opening with dark raisins, dried figs, and sticky dates, followed by toasted almonds, orange peel, dark cocoa, and warm oak spice.

Palate: Full-bodied and velvety on the palate, featuring sweet plum jam, brown sugar, and fruitcake upfront before developing into baking spices, dark chocolate, and seasoned wood tannins.
