Wild Life Distillery Rundle Bar Gin 750ml

Wild Life Distillery 'Rundle Bar' Gin is a special collaborative craft spirit created by Wild Life Distillery in Canmore, Alberta, in partnership with the iconic Fairmont Banff Springs. Inspired by the surrounding Canadian Rockies and the hotel's famous Rundle Bar, this gin features a unique botanical blend—including butterfly pea flower, lavender, heather, and alpine botanicals—which gives it a striking natural deep blue hue that transforms to purple when mixed with acidic mixers like tonic or citrus juice.

Food Pairing: Fresh mountain trout, goat cheese crostini, oysters, summer berry salads, and citrus-infused pastries.

Tasting Notes: Deep indigo-blue in appearance with a smooth, light-to-medium-bodied mouthfeel.

Nose: Fragrant floral aromas of lavender and heather up front, balanced by piney juniper, fresh citrus zest, and subtle herbal complexity.

Palate: Well-rounded and smooth, displaying notes of crisp alpine juniper, bright citrus, subtle earthy roots, and delicate floral layers.

Finish: Clean, crisp, and refreshing with lingering floral notes, light citrus, and a soft dry juniper finish.

Serve: Serve over ice, top with tonic water or fresh lemon juice to watch the natural color shift from indigo to vibrant purple, garnished with a grapefruit wheel or a sprig of fresh lavender.
