Distilled at Still Waters Distillery in Concord, Ontario, and selected by independent bottler Whisky For Us, this limited single cask release spent 9 years maturing before a finishing period in a rare Brazilian Amburana oak cask. Known for imparting distinct baking spices, Amburana wood elevates the rich Canadian grain base into an aromatic profile filled with sweet cinnamon, tonka bean, gingerbread, and toasted coconut.

Food Pairing: Cinnamon rolls, pecan pie, spiced carrot cake, churros with chocolate, or sharp aged Gouda.

Tasting Notes: Rich copper amber with warm mahogany highlights and dense, slow-drifting legs along the glass.

Nose: Highly aromatic and spice-forward, opening with sweet cinnamon stick, ginger snaps, and tonka bean, followed by vanilla bean, toasted coconut, and sweet maple syrup.

Palate: Oily and rich on the palate, featuring toasted graham cracker, brown sugar, and sweet vanilla upfront before developing into intense cinnamon spice, nutmeg, baked apple, and warm oak.
