Volstead Project Barrel Aged Manhattan

Crafted as an exclusive house-collaboration for Vine Arts Wine & Spirits by Highwood Distillers in High River, Alberta, the Volstead Project Manhattan is a premium pre-batched, barrel-aged cocktail. The creation combines Highwood Distillers' 100% Canadian rye whisky with custom sweet vermouth and aromatic bitters, which are then transferred into charred Canadian rye oak barrels. aged at the High River facility for approximately five months, the wood maturation integrates the spirit, softens the bitter edges, and imparts deep notes of dark cherry, baking spice, and sweet vanilla oak.

Food Pairing: Charcuterie boards, smoked meats, aged Cheddar, dark chocolate truffles, or maraschino-infused desserts.

Tasting Notes: Rich mahogany red with warm copper highlights and medium-to-heavy legs along the glass.

Nose: Rich and complex, opening with aromas of stewed cherries, herbal sweet vermouth, and vanilla bean, followed by toasted oak, clove, and subtle citrus peel.

Palate: Velvety, smooth, and well-integrated on the palate, featuring sweet dark cherries, dried plum, and caramel upfront before evolving into baking spices, herbal vermouth, and dry oak tannins.
