This pecorino is aromatic and bright. It is so soft and elegant while being complex with an array of nuances. White peach, melon, and subtle saltiness are the main umbrella of notes. This wine is perfectly medium bodied with medium acidity. During the vinification process, the skins are very carefully removed to avoid maceration.
