Distilled in small copper pot stills using a 100% neutral grain spirit base, this expression is famously infused post-distillation with eight botanicals: butterfly pea blossom, Fairmont Empress house tea, juniper berries, grapefruit peel, coriander seed, cinnamon bark, rose petal, and ginger root. The butterfly pea blossom confers a natural, vivid indigo-blue hue that turns to vibrant pink or purple when mixed with acidic ingredients like tonic water or citrus juice. The resulting gin is citrus-forward and earthy with subtle floral and tea notes.
