About the Uva De Vida Madre
The hand-harvested grapes undergo a 9-month cold maceration on their skins before spontaneous fermentation with native yeasts inside artisanal clay amphorae (tinajas), followed by 12 months of aging in stainless steel. It pours an opaque ruby-purple hue, revealing an intense, dark nose of wild blackberries, fresh blueberries, and licorice, intertwined with rich notes of cacao nibs and dry violet petals. The palate is remarkably voluminous, plush, and warm, framing its dense dark fruit profile with soft, enveloping tannins and a long, persistent finish marked by sweet, velvety notes of candied red fruits.
Food Pairing: Complements creamy textured dishes beautifully, such as wild mushroom risotto, fresh pasta with rich reduction sauces, slow-cooked vegetable curries, or an assortment of soft, creamy cheeses.
