Two Stacks Cloud Cask 7 Year Old Single Pot Still Px Cask Irish Whiskey

Two Stacks Canada Cloud Cask is an extremely limited 7-year-old Single Pot Still Irish Whiskey created for the Canadian market. The whiskey was divided among Oloroso, Pedro Ximénez (PX), and Amontillado Sherry casks, with selected portions later married together in a Spinola Bodega PX cask. Only 120 bottles were produced for Canada.

Food Pairing: Dark chocolate, sticky toffee pudding, fruitcake, roasted nuts, aged cheddar and charcuterie.

Tasting Notes: Rich and sherry-forward, combining dried fruit, dark sweetness, warming spice and the weighty texture associated with Single Pot Still Irish whiskey.

Nose: Dried fruits, raisins, dark berries, caramel, toasted nuts and sweet Sherry.

Palate: Rich PX sweetness with raisins, figs, dark fruit, baking spice, toasted nuts and oak.

Finish: Long and warming with lingering dried fruit, Sherry sweetness, spice and oak.

Serve: Best enjoyed neat or with a few drops of water.
