Signatory Vintage Symington’s Choice Tomintoul 30 Year Old

Signatory Vintage Symington’s Choice Tomintoul 30 Year Old is a rare single-cask Speyside Single Malt distilled at Tomintoul Distillery on 1 May 1995 and bottled in May 2025 after three decades of maturation. Selected by Andrew Symington for the premium Symington’s Choice range, the whisky spent its full maturation in a first-fill Oloroso Sherry Butt, Cask #6. It yielded only 565 bottles at its natural cask strength of 50.7% ABV, without added colour or chill filtration. Three decades in active sherry oak deliver an elegant profile of dried fruits, orange peel, dark honey, toffee, roasted nuts, chocolate, mature oak and warming spice.

Food Pairing: Pair with roast beef, aged Manchego or mature cheddar, roasted hazelnuts, fruitcake, sticky toffee pudding, dark chocolate, dried figs or orange-and-chocolate desserts.

Tasting Notes: Deep and mature yet elegant, combining concentrated dried fruit and sherry sweetness with dark honey, toffee, chocolate, roasted nuts, citrus peel and polished old oak.

Nose: Dried figs, raisins and orange peel develop into dark honey, old leather and polished oak, with rich sherry sweetness underneath.

Palate: Rich toffee and dark chocolate are joined by roasted hazelnuts, poached orchard fruit and plum, followed by cinnamon and mature oak spice.

Finish: Long, warming and elegantly dry, with lingering cocoa, dried fruit, sherry, seasoned oak and gentle spice. 

Serve: Enjoy neat in a tulip-shaped whisky glass and allow it plenty of time to open. At 50.7% ABV, a few drops of water can reveal additional dried fruit, citrus and nutty sherry character.
