Douglas Laing Timorous Beastie Cheese Cellar Collection No. 2 Madeira Finish Limited Edition

Timorous Beastie Madeira Finish is the second release in Douglas Laing’s Cheese Cellar Collection, a trilogy designed to explore Highland blended malt whisky alongside artisan cheeses. Released in 2024, the classic Timorous Beastie Highland Malt was finished for several months in carefully selected Madeira casks, adding rich fruit and confectionery character to its honeyed Highland style. Bottled at 48% ABV, without added colouring or chill filtration, the release was limited to 4,000 bottles worldwide. 

Food Pairing: Gruyère cheese is Douglas Laing’s recommended pairing. Its nutty sweetness and firm, savoury character complement the whisky’s dried-fruit, caramel and Madeira-influenced flavours.

Tasting Notes: A fruit-forward Highland blended malt combining ripe orchard fruit and honey with toasted nuts, caramelized fruit, vanilla and citrus, supported by gentle spice from its Madeira cask finish.

Nose: Ripe orchard fruits with honeyed sweetness, toasted almonds and delicate floral character.

Palate: Toffee and caramelized apple lead into juicy plum, gentle spice and a smooth, silky texture.

Finish: Sweet and warming, with vanilla and orange marmalade lingering alongside gentle spice.

Serve: Enjoy neat at room temperature, particularly alongside Gruyère. A small amount of water can also help reveal more of the fruit and honeyed character.
