The Dalmore 15 Year Old

The Dalmore 15 Year Old is a magnificent Highland single malt that showcases the distillery’s mastery of sherry cask finishing. Initially aged for 12 years in American white oak ex-bourbon barrels, the whisky is then divided equally and finished for a further three years in three distinct 30-year-old Amoroso, Apostoles, and Matusalem Oloroso sherry butts from the historic Gonzalez Byass bodega. These casks are then married back together in an upright sherry cask to create a harmonized, rich, and regal expression. The result is an exceptionally opulent, smooth, and aromatic whisky packed with sweet baking spices, rich orange marmalade, and dark chocolate.

Food Pairing: Rich dark chocolate desserts, venison stew with berry reduction, fruit cake, roasted chestnuts, and mature cheeses like Stilton or aged Gouda.

Tasting Notes : Deep amber and shimmering mahogany in appearance, delivering a smooth, velvety, and luxuriously coating mouthfeel.

Nose : Aromatic and indulgent, leading with prominent aromas of orange marmalade, cinnamon, and nutmeg, followed by sweet ginger, dried fruit, and a subtle hint of rich espresso.

Palate : Rich, sweet, and full-bodied. A delightful rush of mandarin orange, crushed apples, and dark chocolate leads the palate, layered with warm spices like cloves and cinnamon, alongside notes of toasted oak and sweet vanilla.

Finish : Long, warming, and deeply satisfying, leaving a lingering impression of caramelized citrus, sweet baking spices, dark cocoa, and lingering oak tannins.

Serve : Serve neat in a Glencairn glass or snifter to fully appreciate its complex aromatics, or add a few drops of room-temperature water to open up the citrus and spice layers.
