Éric Texier St-Julien en St-Alban Domaine de Pergaud 'Vieille Serine' is an exceptionally rare, complex, and deeply structured natural red wine produced by organic winemaking pioneer Éric Texier. Sourced from ancient vines of Serine—an uncloned, heirloom strain of Syrah—planted on steep granite slopes in Saint-Julien-en-Saint-Alban, this flagship cuvée undergoes traditional whole-cluster fermentation with native yeasts followed by extended aging in neutral oak foudres without added sulfur, fining, or filtration. In the glass, it opens with an expressive bouquet of wild dark berries, damson plum, black olive tapenade, smoked meats, cracked black pepper, and crushed granite minerality. On the palate, it is full-bodied, precise, and vibrant, balancing concentrated dark fruit with fine-grained, mineral-tinged tannins and an exceptionally long, savory finish.
Food Pairing: Pairs wonderfully with roasted rack of lamb, venison loin, duck breast, braised beef short ribs, wild mushroom ragù, and aged hard cheeses.
