Éric Texier Chat Fou (Crazy Cat) 2021 is a lively, energetic, and expressive natural red blend crafted by Éric Texier. Sourced predominantly from Grenache alongside Cinsault and a small proportion of native white varieties like Clairette, the grapes are organically grown on granitic and limestone soils in Saint-Julien-en-Saint-Alban. The wine undergoes spontaneous whole-cluster fermentation using native yeasts and short maceration in concrete tanks, followed by aging on fine lees without fining or filtration. In the glass, it displays a bright ruby color with inviting aromas of crunchy red cherries, wild raspberries, crushed herbs, and white flower lift. The palate is medium-bodied, fresh, and supple, balancing energetic acidity with silky tannins and a savory, peppery finish.
