About the Eric Texier Chat Fou
Éric Texier Chat Fou (Crazy Cat) is a lively, vibrant, and joyfully fresh natural red wine co-fermented from organically farmed vineyards planted on granitic soils in Saint-Julien-en-Saint-Alban. Composed primarily of Grenache and Cinsault with a small percentage of native white grapes such as Clairette, it undergoes short maceration and spontaneous native yeast fermentation in concrete tanks with minimal extraction. Aged on fine lees and bottled unfined and unfiltered with minimal sulfur, it bursts with expressive aromas of crunchy red cherries, wild raspberries, subtle floral notes, and delicate herbs balanced by bright acidity and a silky mouthfeel.
Food Pairing: Pairs wonderfully with Mediterranean mezze, roasted eggplant, grilled lamb chops, charcuterie, herb-roasted chicken, and light pasta dishes.
