That Boutique-y Whisky Company 21 Year Old Irish Whiskey

Boutique-y Whisky Company, this 21 Year Old Irish Whiskey is a marriage of mature malt and grain whiskeys. Aged for at least 21 years and drawn from a combination of ex-rum barrels, refill bourbon hogsheads, Oloroso sherry butts and Pedro Ximénez sherry butts, it offers a mature, fruit-forward profile combining tropical fruit, honey and vanilla with toasted oak, candied nuts and warming spice. It is bottled at 45.8% ABV, non-chill filtered and at natural colour.

Food Pairing: Aged cheddar, roasted nuts, fruit cake, dark chocolate, caramelized pear, or roasted pork with a lightly sweet glaze.

Tasting Notes: Elegant and mature, balancing tropical and orchard fruits with honeyed sweetness, toasted oak, candied nuts and gently drying spice.

Nose: Bright and fruity, opening with pineapple, peach and banana alongside white peach, pear, creamy vanilla and runny honey.

Palate: Rich yet refined, with caramelized nuts, banana, mango and guava accompanied by pepper, dry spice and a subtle green-tea character.

Finish: Long and mature, with drying spice, seasoned oak and lingering fruit sweetness gradually giving way to a gently tannic character.

Serve: Enjoy neat at room temperature in a Glencairn or tulip-shaped whisky glass; a few drops of water can help open its tropical fruit, honey and mature oak character.
