The Tawse Spark Brut Sparkling is a traditional method sparkling wine made from hand harvested and sustainably grown Ontario grapes. This sparkling is a blend of 72% Pinot Noir, 23% Pinot Gris, and 5% Chardonnay, and while Pinot Gris may not be one of the grapes you find in traditional French sparkling wine, once you try this wine, the place this grape plays completely makes sense.
On the nose, this wine is fragrant with bellows of ripe citrus, pear, and green apple. On the palate, it is a medley of English muffin, Meyer lemon, and pear custard. These flavours are all backed by solid structure.
