About the Taittinger Folies De La Marquetterie
The Taittinger Les Folies de la Marquetterie is the house's inaugural "Champagne de Domaine," crafted exclusively from grapes grown at the Folies vineyard surrounding the historic Château de la Marquetterie. This single-estate cuvée pays homage to the family's origins and is produced using a "green harvest" technique to ensure optimal aromatic maturity and sugar content. Unlike the house's more floral, Chardonnay-led blends, this wine is structured and powerful, featuring a blend of 55% Pinot Noir and 45% Chardonnay. Each plot is vinified separately, with select batches aged in large oak barrels before undergoing five years of bottle maturation. The resulting Champagne is deep yellow with golden highlights, offering a rich bouquet of peach and apricot jam, toasted brioche, and vanilla. Its full-bodied and smooth palate, finishing with subtle woody notes, makes it an ideal companion for robust dishes such as roasted meats or fish in sauce.
