About the Giampaolo Tabarrini Adarmando Trebbiano Spoletino Bianco Umbria
A magnificent and critically acclaimed single-varietal white wine crafted by the passionate Giampaolo Tabarrini in honor of his maternal grandfather, Armando. Sourced from remarkably historic, ultra-old Trebbiano Spoletino vines—some planted as far back as 1920—the grapes are the absolute last at the estate to be harvested. Vinified with pure free-run juice, it undergoes 12 months of patient maturation on its fine lees in stainless steel with regular battonage (lees stirring) followed by six months in the bottle. It reveals a brilliant straw-yellow profile with golden highlights, bursting with an incredibly expressive and complex nose of orchard fruit, anise, fresh sage, wild honey, and distinct white truffle minerals. The palate is wonderfully dense, textural, and muscular, beautifully guided by a nervous, laser-like acidity and an intensely sapid, salty mineral finish built for serious cellaring.
Food Pairing: Pairs flawlessly with pappardelle in white wild boar ragù, stewed or grilled fish, roasted poultry, and herb-infused white meats.
