About the Sylvius Drijfhout Gin
Handcrafted in Schiedam, Netherlands—the historic capital of Dutch distilling—by Onder de Boompjes (established in 1658), Sylvius Gin is named in honor of Franciscus Sylvius, the 17th-century Dutch physician often credited with early formulations of genever. Distilled in small batches using traditional copper pot stills, this spirit features a blend of ten whole, fresh botanicals including fresh orange peel, lavender, star anise, cinnamon, and cumin alongside core juniper. The fresh botanical focus yields a remarkably smooth, aromatic profile that bridges classic Dutch heritage with modern dry gin complexity.
Food Pairing: Fresh Dutch herring, smoked salmon blinis, roasted pork belly, aged gouda, grilled duck breast, or lemon-herb chicken.
Tasting Notes: Crystal clear in appearance with a rich, silky, and oil-rich medium-to-full body.
Nose: Intensely aromatic and complex, opening with bold piney juniper berries and fresh orange zest, supported by fragrant lavender, subtle star anise, warm cinnamon, and an earthy hint of cumin.
Palate: Velvety, smooth, and robust on the palate, opening with juicy citrus oils and resinous pine before unfolding into warm layers of baking spice, delicate floral lavender, licorice, and grounding coriander.
Finish: Long, warming, and dry with lingering notes of zesty orange peel, subtle herbal spice, and a clean, resinous pine depth.
Serve: Serve over large ice cubes topped with premium Indian tonic water, garnished with a strip of fresh orange peel and a star anise pod or sprig of lavender, or as an exceptional, characterful base for a classic Dry Martini, Negroni, or Martinez.
