Stillhead Sherry Cask Rye Whisky

Produced by Stillhead Distillery in Duncan, British Columbia, Sherry Cask Rye Whisky is a 100% B.C. rye whisky finished in Pedro Ximénez sherry casks. The whisky first spends several years maturing in new American oak before being transferred into once-used PX casks imported from Spain. The intensely sweet sherry influence complements Stillhead’s naturally spicy rye character with layers of dark fruit, honey, caramel and chocolate. Bottled at 50% ABV, it delivers a rich, full-bodied balance of rye spice and dessert-like sweetness.

Food Pairing: Dark chocolate, fruit cake, aged cheddar, roasted pork, pecan desserts, or vanilla ice cream with berry compote.

Tasting Notes: Rich and fruit-forward, balancing spicy rye with dark berries, dried fruit, brown sugar, chocolate, caramel and sweet sherry character.

Nose: Aromatic and layered, with dried fruit, strawberry jam and toasted rye bread joined by wildflower honey, salted caramel, orange zest and pecan.

Palate: Rich and creamy, developing ripe dates, blackberries and blackcurrants alongside brown sugar, dark chocolate, fig, caramel, butterscotch and orange marmalade.

Finish: Long and creamy, with butterscotch toffee, blackcurrant and raisin complemented by rye spice, sweet cinnamon and a touch of mulled-wine character.

Serve: Enjoy neat in a Glencairn or tulip-shaped glass; at 50% ABV, a small addition of water can help open its dark fruit, caramel and sherry-driven character.
