Stillhead Garry Oak Rye Whisky

Produced by Stillhead Distillery in Duncan, British Columbia, Garry Oak Single Grain Rye Whisky is a limited-release Canadian rye showcasing rare native Garry oak (Quercus garryana). The current second edition combines whisky aged entirely in refill Garry oak with rye initially matured for three years in new American oak before receiving an additional two years in once-used Oregon-sourced Garry oak casks. Bottled at 50% ABV, it delivers a concentrated profile of dark sweetness, baking spice, cocoa, coffee and distinctive oak character.

Food Pairing: Smoked beef, roasted pork, aged cheddar, dark chocolate, coffee desserts, or toasted nuts with honey and warming spices.

Tasting Notes: Rich and full-bodied, balancing robust rye character with molasses, dark honey, baking spices, cocoa, coffee and distinctive toasted oak.

Nose: Deep and aromatic, with dark honey and molasses accompanied by toasted oak, baking spices and subtle cocoa.

Palate: Bold and concentrated, developing rye spice alongside cola, dark honey, cocoa and roasted coffee with a firm oak structure.

Finish: Long and warming, with lingering baking spice, coffee, cocoa and dry toasted oak.
