Starlight Distillery Carl T. Huber's Honey Finish Bourbon

A spectacular, highly limited release from Starlight Distillery that combines the robust intensity of a cask-strength bourbon with the lush sweetness of natural honey. This expression takes their award-winning Carl T. Huber straight bourbon and finishes it in barrels that previously held locally sourced, farm-fresh honey. Bottled at a blistering 113.7 proof (56.85% ABV), the thick, floral honey extracts perfectly counterbalance the heavy, concentrated barrel char and intense baking spices of the uncut whiskey.

NOSE

Intensely aromatic with rich waves of dark caramel, floral honey blossom, heavy toasted oak, and warm cinnamon.

PALATE

Thick, viscous, and full-bodied. A massive rush of rich toffee and vanilla cream is beautifully coated in sweet, syrupy honey and balanced by a fiery wave of baking spice.

FINISH

Exceptionally long and chest-warming, leaving a lasting trail of thick honey, dark chocolate, and spicy oak.
