Signatory Vintage Speyside (M) 2011 13 Year Old 100 Proof Edition #25

Signatory Vintage Speyside (M) 2011 13 Year Old is Edition #25 of Signatory Vintage’s 100 Proof series. Distilled in 2011 and bottled in 2024 after 13 years of maturation, the whisky was drawn from a combination of first-fill and refill Oloroso Sherry butts and bottled at 57.1% ABV (100 Proof) without chill filtration or added colouring. The label officially keeps the Speyside distillery anonymous as “Speyside (M)”, although specialist sources identify the source as Macallan. The whisky delivers a rich Sherry-led profile of dark fruit, chocolate, caramel, roasted coffee and warming spice.

Food Pairing: Roast beef, glazed pork, mature cheddar, fruitcake, roasted nuts, dark chocolate or sticky toffee pudding.

Tasting Notes: Rich and full-bodied with concentrated Sherry character, combining dried and stewed fruits with dark chocolate, caramel, roasted coffee and warming oak spice.

Nose: Dried fruits, dark chocolate and orange zest with roasted coffee beans and warm baking spices.

Palate: Fruitcake, stewed plums and figs layered with toffee, dark caramel, brown sugar and rich Oloroso Sherry character.

Finish: Long and warming with espresso, dark chocolate, Sherry sweetness, spice and drying oak tannins.

Serve: Enjoy neat for maximum intensity, or add a small amount of water to soften the 57.1% strength and develop the fruit, chocolate and Sherry notes.
