About the Sottimano Pajore Barbaresco
A magnificent single-vineyard Piedmontese red wine sourced from the high-altitude, limestone-rich soils of the famous Pajorè cru in Treiso. Crafted with old vines ranging from 40 to 60 years old and subject to long, traditional native-yeast macerations, it displays an austere, tightly wound, and beautifully classic profile. It reveals elegant notes of wild strawberries, tart cherries, orange zest, and sweet spices wrapped around a savory, mineral-driven backbone of high-toned salinity and firm, vertical tannins.
Food Pairing: Pairs flawlessly with roasted rack of lamb with rosemary, slow-braised duck or wild boar ragù, porcini mushroom risotto, or mature Parmigiano-Reggiano.
