About the La Higuera Cedrosanum Sotol (46.8%)
La Higuera Cedrosanum Sotol is an artisanal, wild-harvested Mexican spirit crafted by Master Sotolero Gerardo Ruelas. Pit-cooked in an outdoor conical oven fired with wood and rocks, ground by hand, naturally fermented in pine wood vats, and double-distilled in copper pot stills, it showcases rich earthy, mineral, and woody notes.
Food Pairing: Charred meats, barbecued ribs, grilled mushrooms, smoked cheeses, or savory tacos.
Tasting Notes : Crystal clear in appearance with a medium-bodied, smooth, and balanced mouthfeel.
Nose : Woody notes accompanied by charred ripe fruit, mineral tones, and subtle caramel.
Palate : Complex smoked grass, cedarwood, salted BBQ fat, dried herbs, and gentle leather sweetness.
Finish : Long, dry, and balanced with lingering cedar, light smoke, and earthy minerality.
Serve : Serve neat at room temperature in a glass tasting vessel or traditional copita.
