Signal Hill Founders Select Overproof

Signal Hill Founders Select Overproof is a limited, higher-strength expression of Signal Hill Canadian Whisky, bottled at 56.3% ABV. Crafted from Canadian corn and barley whiskies and blended with Newfoundland water, it follows the brand’s three-cask maturation approach using Canadian whisky, new white oak and bourbon casks. The higher bottling strength amplifies the core Signal Hill profile, bringing greater weight and intensity to its honey, vanilla, dried fruit and spice character while retaining a balanced Canadian whisky style.

Food Pairing: Grilled steak, smoked brisket, aged cheddar, dark chocolate, butter tarts, or roasted nuts with caramel and warming spices.

Tasting Notes: Rich and full-bodied, combining honey and vanilla sweetness with dried fruit, burnt sugar, toasted oak and warming spice.

Nose: Concentrated yet balanced, with honey and vanilla accompanied by dried fruit, toasted oak and a gentle layer of spice.

Palate: Bold and viscous, developing honeyed malt and dried fruit alongside caramelized sweetness, vanilla, oak and warming spice.

Finish: Long, full-bodied and warming, with lingering oak, spice and caramelized sweetness while maintaining good balance despite the elevated strength.

Serve: Enjoy neat in a Glencairn or tulip-shaped whisky glass; at 56.3% ABV, a few drops of water can help open its aromatics. It also works well in robust whisky cocktails such as an Old Fashioned, Whisky Sour or Espresso Martini.
