About the Sanctuary Whisky Signature Edition
Produced entirely in-house by Fermentorium Distilling Co. in Victoria, British Columbia, Sanctuary Signature Edition is a Canadian single malt crafted from 100% B.C.-grown barley that is malted, mashed, fermented and distilled on site. The 2026 release marries whiskies matured for 6–9 years in Bourbon, red wine and Phillips beer casks. Bottled at 42% ABV, it combines rich toffee and ripe fruit with vanilla, clove, pepper and charred oak, finishing with a distinctive trace of coastal sea air.
Food Pairing: Roasted pork, grilled steak, aged cheddar, baked apple, toasted nuts, or caramel desserts with gentle warming spices.
Tasting Notes: Smooth and malt-forward, balancing rich toffee and ripe fruit with vanilla, pepper, clove, charred oak and subtle coastal salinity.
Nose: Rich and inviting, with toffee and ripe fresh fruit accompanied by a gentle hint of clove.
Palate: Smooth and malt-forward, developing vanilla, pepper and clove alongside charred oak with a creamy, leathery texture.
Finish: Short and warming, with lingering pepper, gentle oak and a subtle trace of coastal sea air.
Serve: Enjoy neat at room temperature, over ice, or in whisky-forward cocktails such as a Paper Plane.
