San Cosme Mezcal Artesanal

Crafted in Santiago Matatlán, Oaxaca, Mexico, San Cosme is an artisanal mezcal produced under the expertise of maestro mezcalero Edgar González. Named after Saint Cosmas, the patron saint of doctors and apothecary workers, San Cosme was designed to offer an accessible, balanced, and mixology-friendly spirit that preserves traditional Oaxacan craft. Made from 100% estate-grown Espadín agave (Agave angustifolia) maturing for 7 to 9 years, the piñas are slow-cooked in traditional underground conical stone pit ovens fueled by oak wood. Hand-crushed or processed via traditional stone tahona wheel, the mash is open-fermented in pine wood tubs with natural airborne yeasts. Double-distilled in classic copper pot stills, this unaged expression yields a remarkably smooth, fruit-forward profile balancing bright citrus, caramel agave sweetness, delicate earthy spices, and soft, integrated mesquite smoke.

Food Pairing: Grilled pork carnitas, fresh ceviche with citrus, chicken mole verde, goat cheese crostini, fish tacos, or dark chocolate with sea salt.

Tasting Notes: Crystal clear in appearance with brilliant clarity, a smooth medium body, and clean, delicate tears.

Nose: Fresh and inviting, opening with sweet cooked agave, bright orange peel, and fresh green herbs, supported by soft mesquite smoke, white pepper, and light damp earth.

Palate: Smooth, round, and approachable on the palate, featuring caramelized agave nectar, crisp citrus oils, and green apple upfront before unfolding into soft oak smoke, cracked white pepper, light herbal tea, and wet stone minerality.

Finish: Medium-long, clean, and crisp with lingering notes of sweet agave, gentle wood smoke, zesty citrus pith, and a mild peppery warmth.
