Sacro Imperio Cenizo Mezcal Artesanal

Crafted in Nombre de Dios, Durango, Mexico, Sacro Imperio Cenizo is a premium artisanal mezcal produced by local master mezcaleros in the high-desert valleys of Northern Mexico. Made from 100% wild-harvested Cenizo agave (Agave durangensis) that matures for 10 to 14 years on volcanic mountain slopes, the mature piñas are slow-roasted in traditional underground conical stone pit ovens fueled by oak and local mesquite wood. Crushed using traditional mechanical shredders, the agave mash is open-fermented in pine wood tubs with natural ambient airborne yeasts. Double-distilled in classic copper pot stills, this unaged expression highlights the bold, complex terroir of Durango, balancing pine forest aromas, sweet cooked agave, subtle dark cocoa undertones, and mesquite smoke.

Food Pairing: Slow-roasted pork carnitas, smoked beef brisket, grilled lamb chops, aged Manchego cheese, dark chocolate with sea salt, or grilled octopus with paprika.

Tasting Notes: Crystal clear in appearance with brilliant clarity, a silky medium-to-full body, and slow-dripping, viscous tears.

Nose: Rich, complex, and earthy, opening with sweet cooked agave, gentle mesquite smoke, and damp pine needles, supported by white pepper, light citrus peel, dark chocolate, and subtle damp soil.

Palate: Full-bodied, smooth, and multi-layered on the palate, featuring caramelized agave nectar, green apple, and cocoa upfront before unfolding into soft wood smoke, cracked black pepper, pine resin, and volcanic stone minerality.
