About the Rossville Union Barrel Proof 7 Year Old
Produced at Ross & Squibb Distillery in Lawrenceburg, Indiana, Rossville Union Barrel Proof 7 Year Old is a limited-release straight rye whiskey bottled directly at barrel strength. Aged for seven years in new charred oak, it combines multiple rye whiskey mashbills to create a bold, concentrated profile. Bottled around 58.5% ABV, it delivers rye spice, vanilla and caramel alongside seasoned oak, chocolate and baking spices, finishing with lingering rye and fresh mint.
Food Pairing: Smoked brisket, grilled steak, aged cheddar, dark chocolate, roasted nuts, or caramel desserts with cinnamon and warming spices.
Tasting Notes: Bold and full-bodied, combining rye spice and caramel with vanilla, seasoned oak, chocolate, baking spices and refreshing mint.
Nose: Spicy and rich, with rye spice and vanilla accompanied by caramel, seasoned oak and a subtle touch of chocolate.
Palate: Powerful and concentrated, developing sweet caramel and vanilla alongside baking spices, chocolate and mature oak.
Finish: Long and warming, with lingering rye spice, seasoned oak and a refreshing hint of sweet mint.
Serve: Enjoy neat in a Glencairn or tulip-shaped glass; at barrel proof, a few drops of water can help open its caramel, vanilla and rye-spice character.
