Ibi Elvi is a wild-fermented cider from Revel Cider, crafted with apples sourced from Alberta orchards. It presents a hazy, golden appearance with aromas of fresh apple, honey, and subtle funk from wild fermentation. On the palate it is gently tart, lightly effervescent, and dry, with lingering orchard fruit and earthy complexity.
Food Pairing: Aged cheddar, charcuterie boards, roasted pork, soft-ripened cheeses, and rustic grain-based dishes such as lentil salads or flatbreads.
