About the Chateau Prieure du Monastir del Camp Rivesaltes
Crafted in the sun-drenched Roussillon region of Southern France, Château Prieuré du Monastir del Camp Rivesaltes Ambré is an extraordinary, historical fortified sweet wine (Vin Doux Naturel). Hailing from an estate centered around a magnificent 11th-century priory in Passa, this cuvée captures the ancient Mediterranean tradition of oxidative aging. Sourced from low-yielding old vines rooted in schist, clay-limestone, and gravelly alluvial soils, the grapes—primarily Grenache Blanc, Grenache Gris, and Macabeu—are left to achieve maximum ripeness under the intense Mediterranean sun. The winemaking follows the traditional mutage process, where neutral grape spirit is added during fermentation to arrest sugar conversion, preserving rich natural grape sugars. Subjected to extended oxidative maturation in ancient oak casks (foudres) and glass demijohns (bonbonnes), this rare library wine develops immense complexity, warmth, and nutty depth.
Food Pairing: Blue cheeses (Fourme d'Ambert, Roquefort, Gorgonzola Dolce), salted caramel desserts, pecan pie, dark chocolate tarts, crème brûlée, foie gras, and toasted nuts.
