About the Poli Uvaviva Italiana di Poli
Poli Uvaviva Italiana di Poli is an extraordinarily light, fresh, and expressive Italian grape brandy (Acquavite d'Uva) produced by the historic Poli Distillerie in Schiavon, Veneto. While often grouped alongside traditional grappas due to its producer's fame, Uvaviva is distinct because it is distilled from the whole, freshly fermented must, juice, and skins of aromatic white grapes rather than just the leftover pomace. Crafted from a carefully balanced blend of 60% Malvasia Bianca di Candia and 40% White Muscat (Moscato Bianco) grapes, it is slowly distilled in small batches using the distillery's ancient, discontinuously operated Athanor copper bain-marie alembic still. This ultra-gentle heating preservation technique captures the delicate, highly volatile floral and primary fruit terpenes of the aromatic grape varieties, resulting in a remarkably smooth spirit that exhibits the ethereal elegance of a ballet dancer.
Food Pairing: This highly floral, aromatic, and fruit-forward distillate pairs beautifully with delicate appetizers, fresh fruits, and light pastries. It acts as a perfect companion to fresh fruit tarts (peach, pear, or apricot), lemon shortbread biscuits, panettone, and almond-based biscotti. For a savory contrast, it pairs wonderfully with creamy, mild cheeses like fresh ricotta drizzled with wildflower honey, soft goat cheese, or served alongside a proscuitto and fresh melon platter.
TASTING NOTES - Crystal clear with brilliant, watery-silver transparency. The texture is light, exceptionally smooth, and delicate, floating across the palate with a clean, weightless crispness and zero harsh alcohol burn.
NOSE - Immensely fragrant, soft, and beautifully expressive, opening with a rich, sweet basket of ripe white grapes, fresh green apples, juicy apricots, and aromatic summer pears, gracefully underpinned by elegant notes of orange blossoms and wild spring flowers.
PALATE - Supple, fresh, and masterfully balanced. A delicate entry of candied grape juice, ripe melon, and sweet stone fruits is seamlessly supported by an integrated wave of lively, crisp acidity, soft herbal undertones, and a touch of white honey sweetness.
FINISH - Medium to long, incredibly clean, and aromatic. The bright orchard fruit characteristics slowly recede, leaving a highly satisfying, refreshing dryness marked by a lingering echo of orange peel, fresh grape skins, and a delicate, soft floral warmth.
SERVE - Best served slightly chilled at a cellar temperature of 10-15°C (50-59°F) in a traditional tulip-shaped glass or a small spirits snifter to properly collect and appreciate its intricate, volatile aromatics. It also works as a phenomenal, ultra-premium substitute for Pisco in an elevated version of a classic Pisco Sour cocktail.
