Poli Sarpa di Poli Grappa is a historic, robust, and beautifully rustic Italian pomace brandy produced by the iconic Poli Distillerie in Schiavon, Veneto. Introduced in 1989 by Jacopo Poli, "Sarpa" means "grape pomace" in the local Venetian dialect, capturing the true traditional soul of old-school grappa. It is masterfully crafted from a balanced blend of fresh, aromatic pomace from Cabernet Sauvignon and Merlot grapes harvested across the rolling hills of the Veneto region. Distilled in small batches using the family's historic, discontinuously operated copper steam pot stills, this clear spirit remains completely unaged to focus entirely on pure varietal expression. It delivers a deeply authentic flavor profile that expertly bridges intense herbaceous structures with a clean, timeless elegance.
Food Pairing: This highly structured, traditional red-grape grappa acts as a brilliant digestif alongside rich, savory Italian dishes and hearty snacks. It pairs exceptionally well with aged cheeses like Parmigiano-Reggiano, sharp Pecorino, or Asiago Stravecchio. It also matches perfectly with dry cured meats like prosciutto or bresaola, and stands up beautifully next to dark, bittersweet chocolate, espresso-infused biscotti, or traditional fruit-and-nut panettone.
TASTING NOTES - Crystal clear with brilliant, watery-silver transparency. The texture is medium-to-full-bodied, pleasantly robust, and coats the palate with a clean, solid structure and an authentic, rustic warmth.
NOSE - Forward, fresh, and proudly varietal, opening with a rustic bouquet of freshly pressed red grapes, crushed vine leaves, and cut grass, beautifully supported by elegant undertones of red currants, green bell pepper, and a touch of wild geranium flowers.
PALATE - Clean, frank, and beautifully balanced. A dry, powerful entry driven by intense notes of fresh grape must and dark berries is immediately balanced mid-palate by a sophisticated herbaceous grip, subtle notes of black pepper, and a solid, traditional grape-skin oiliness.
FINISH - Long, dry, and highly refreshing. The robust red fruit and green herbaceous notes recede slowly and gracefully, leaving a deeply satisfying trail of dry spice, grape skins, and a comforting, persistent warmth.
SERVE - Best enjoyed neat at a cellar temperature of roughly 10-15°C (50-59°F) in a traditional tulip-shaped grappa glass or a small spirits snifter, allowing the liquid to sit and breathe for a moment to fully release its complex red-grape aromatics.
