About the Poli La Premiere
Poli La Premiere is a monumental, ultra-premium aged pomace brandy that represents a legendary cross-border collaboration between Italian distillation mastery and historic French winemaking elite. Conceived from a decades-long dream by master distiller Jacopo Poli, this highly exclusive expression is crafted by collecting the incredibly prestigious, fresh grape pomace of Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot sourced directly from a world-renowned Château Premier Cru in Pauillac (Médoc), France—specifically Château Lafite Rothschild. The pomace is rushed to the Veneto region and distilled using traditional, discontinuously operated copper steam pot stills. It is then aged patiently for 8 years in the very same French oak barrels shipped from the Château, creating an imposing, exceptionally luxurious spirit with a profound Venetian-Bordeaux soul.
Food Pairing: This highly structured, deeply sophisticated aged spirit pairs phenomenally with luxurious, rich desserts and high-end treats. It serves as a flawless companion to a rich vanilla bean crème brûlée, dark chocolate fondant, classic French tarte tatin, or fine marzipan and nougat confections. For a savory contrast, it matches elegantly with an artisanal cheese board featuring sharp, deeply aged Parmigiano-Reggiano, fully mature Pecorino Riserva, or a rich, complex French blue cheese alongside roasted almonds and dried figs.
TASTING NOTES - A deep, warm amber gold with rich polished copper highlights. The texture is intensely full-bodied, unctuous, and remarkably smooth, coating the palate in a velvety, opulent layer of warm spirit density with zero aggressive heat.
NOSE - Deeply aromatic, majestic, and immensely complex, opening with a lavish, banquet-like array of sweet cooked black fruits, rich marzipan, and toasted hazelnuts, beautifully layered with vanilla bean, dried plums, candied orange peels, and sophisticated old oak tannins.
PALATE - Powerful, dry, and masterfully rounded. A rich entry of dark raisins, stewed black cherries, and sweet almond paste expands elegantly across the mouth, seamlessly balanced mid-palate by warming baking spices, dark cocoa, tobacco leaf, and structured, velvety wine-cask wood tannins.
FINISH - Exceptionally long, deep, and deeply comforting. The initial fruit and marzipan sweetness recedes slowly, leaving an enduring, highly satisfying trail of warm toasted oak, dry spice, and a lingering fullness of complex fruit oils.
SERVE - Best enjoyed strictly neat at room temperature, ideally between 18-20°C (64-68°F), served in a traditional tulip-shaped glass or a premium spirits snifter. Allow the spirit to rest and breathe for several minutes before sipping to fully unlock its volatile, French wine-cask aromatics.
