Crafted in Magog in the Eastern Townships of Quebec, Canada, Pinard et Filles "Bambine" is an ultra-rare, iconic natural sparkling rosé produced by one of Canada's most celebrated cult micro-wineries. Founded by Frédéric Simon and Catherine Lévesque, Pinard et Filles focuses on organic and biodynamic viticulture, working with cold-hardy hybrid grape varieties like Frontenac Gris, Frontenac Blanc, and Petite Perle that thrive in Quebec's cool climate. Meaning "young girl" or "child" in French, Bambine is a vibrant pet-nat (pétillant naturel) crafted via the ancestral method (méthode ancestrale), where primary fermentation finishes inside the bottle to generate delicate, natural effervescence. Bottled unfined, unfiltered, and made with zero added sulfur, this cuvée offers a pure, energetic snapshot of cool-climate terroir and artisanal intervention.
Food Pairing: Freshly shucked oysters, charcuterie with prosciutto, fried chicken, salmon tartare, goat cheese crostini, spicy Asian cuisine, and fresh summer salads.
