About the Pinard et Filles Balbutiements
Crafted in Magog in the Eastern Townships of Quebec, Canada, Pinard et Filles "Balbutiements" is an extraordinary, highly coveted natural pet-nat (pétillant naturel) sparkling wine from one of North America's most iconic cult micro-wineries. Founded by Frédéric Simon and Catherine Lévesque, Pinard et Filles practices meticulous biodynamic farming, producing living, expressive wines from hybrid grape varieties ideally suited to Quebec's cool climate. Meaning "first steps" or "stammerings," Balbutiements is produced using the ancestral method (méthode ancestrale), where primary fermentation finishes inside the bottle to create natural, spontaneous effervescence. Unfined, unfiltered, and made with zero added sulfur, this cuvée captures an raw, wildly energetic, and ultra-refreshing expression of cool-climate natural winemaking.
Food Pairing: Freshly shucked oysters, fried chicken, charcuterie boards, pork belly tacos, goat cheese crostini, artisanal sourdough with cultured butter, and ceviche.
