About the Pechotierra Maguey Cenizo Mezcal
Pechotierra Maguey Cenizo Mezcal is an artisanal Mexican agave spirit ("vino del norte") produced by maestro vinatero Jorge Luis Torres Casas in Laguna de Sánchez, Nuevo León. Crafted from wild Maguey Cenizo (Agave durangensis), the agave hearts are pit-roasted with oak and mesquite, wild-fermented with local pulque, and double-distilled in traditional copper stills. It delivers a rich, earthy, and complex profile characterized by dark mineral tones, sweet cooked agave, and subtle mesquite smoke.
Food Pairing: Charcoal-grilled meats, roasted lamb, mole negro, aged cheeses, and dark chocolate desserts.
Tasting Notes : Crystal clear in appearance, offering a full-bodied, rich, and velvety mouthfeel on the palate.
Nose : Earthy minerals, roasted agave, dark cocoa, subtle pine, and a delicate wood smoke.
Palate : Savory and complex with sweet cooked agave, dark chocolate, earthy minerals, subtle leather, and gentle mesquite smoke.
Finish : Long, warm, and persistent with lingering mineral notes, sweet roasted agave, and a soft, smoky dryness.
