Pascal Cotat 'La Grande Côte' Sancerre 2024 is an exceptional, structured, and age-worthy natural expression of Sauvignon Blanc produced by the renowned Pascal Cotat. Sourced from the steeply terraced 'La Grande Côte' vineyard in Chavignol—famous for its deep Kimmeridgian marl and pure chalk soils—the grapes are hand-harvested late to achieve optimal phenolic maturity. Spontaneously fermented with indigenous yeasts in neutral oak demi-muids and aged without fining or filtration, it reveals expressive aromatics of white peach, citrus peel, orange blossom, and distinct crushed flint minerality. On the palate, it is broad and richly textured yet held in precise balance by a spine of vibrant acidity, leading to a long, saline, and complex finish.
Food Pairing: Pairs wonderfully with oysters, pan-seared sea scallops, grilled Dover sole, Crottin de Chavignol goat cheese, roasted poultry, and herb-crusted white fish.
