About the La Parde de Haut-Bailly Pessac-Leognan
Crafted in the famed Pessac-Léognan appellation on Bordeaux’s Left Bank, La Parde de Haut-Bailly is the refined second wine of the prestigious Grand Cru Classé estate, Château Haut-Bailly. Sourced from the estate’s historic gravel-rich soils over clay and limestone, this classic cuvée is created with the same meticulous precision, sustainable vineyard management, and rigorous winemaking care as the Grand Vin. Composed of a blend of Cabernet Sauvignon, Merlot, and Cabernet Franc, it undergoes traditional fermentation in temperature-controlled concrete and stainless steel vats before aging in fine French oak barrels. Designed to offer a more accessible, silky, and forward-drinking expression of the Haut-Bailly terroir, it beautifully captures the elegance, structure, and smoky mineral finesse characteristic of Pessac-Léognan.
Food Pairing: Roasted rack of lamb, pan-seared duck breast with cherry reduction, grilled ribeye steak, braised veal chops, mushroom risotto, and aged hard cheeses like Comté or Gouda.
