About the Paranubes Criolla Rum
Paranubes Criolla Rum is an artisanal Mexican cane juice rum (aguardiente de caña) produced in the cloud forests of the Sierra Mazateca in Oaxaca. Distilled exclusively from 100% Criolla sugarcane—a heirloom, wild sugarcane variety grown in the region—the juice is naturally wild-fermented and distilled in copper column stills. Unaged and bottled at high proof, it offers a vibrant, grassy, and savory profile distinct to this heirloom sugarcane variety.
Food Pairing: Fresh seafood ceviche, grilled prawns, fish tacos, roasted pork carnitas, fresh goat cheese, and tropical fruit desserts.
Tasting Notes : Crystal clear in appearance with a full-bodied, oily, and expressive mouthfeel on the palate.
Nose : Freshly cut sugarcane, green olive brine, earth, tropical citrus, wild herbs, and grassy vegetation.
Palate : Savory and vibrant with flavors of sweet cane juice, salty brine, green pepper, ripe tropical fruits, and light earthy mineral undertones.
Finish : Long, warm, and lingering with sweet grassy notes, subtle herbal spice, and a crisp, dry finish.
